Strawberry Baked Donuts with Strawberry Vanilla Glaze with Kitchenaid
Ingredients:
For the donuts
- 2 cups (240 g) Bob’s Red Mill all-purpose flour
- 2/3 cup (140 g) granulated sugar
- 2 teaspoon Bob’s Red Mill baking powder
- 1 teaspoon salt
- 4 tablespoons (56 g) coconut oil, melted
- 2 flax eggs: mix 2 TBS Bob’s Red Mill flaxseed meal with 4 TBS water before you begin
- 200 ml plant milk at room temperature (oat, soy, coconut or almond)
- 2 teaspoon vanilla extract
- 75g strawberries, chopped (slightly pulse in food processor)
For the vanilla glaze
- 1 cup (160 g) powdered sugar sifted
- 1 teaspoon vanilla extract
- 1/8 tsp salt
- 4 tablespoons milk/strawberry mixture (boil 4-6 frozen strawberries in 1/4 cup of milk & blend)
Instructions:
- Preheat the oven to 175°C and grease your donut pan by brushing cavities with melted coconut oil with a pastry brush. Set aside.
Make the donuts
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the flax egg, milk, oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir together until just combined. A few lumps are okay; don’t over mix!
- Fill the donut cavities with batter using a spoon, large ziplock bag with a corner snipped off or a piping bag. Fill them ¾ full, but be careful not to overfill.
- Place the pan in the oven and bake for 12-14 minutes.
- Remove the donuts from the oven and transfer them onto a wire rack to cool completely. While the donuts cool, make the glaze.
Make the glaze
- In a medium bowl, whisk together the powdered sugar, vanilla extract, and salt.
- Start with 2 tablespoons of the strawberry milk mixture and whisk until smooth. If the glaze is too thick, gradually add more milk, ½ teaspoon at a time, until you reach your desired consistency.
Assemble:
- Dip each donut in the vanilla glaze, giving them a twist as you lift them to let the excess glaze drip back into the bowl.
- Place them back on the wire rack and immediately sprinkle them with your favorite toppings like dry rose petals.
- Allow the glaze to set at room temperature for about 30 minutes before serving.
