Ingredients:
1 cup Bob’s Red Mill rolled oats
1 cup Bob’s Red Mill coconut meal
½ cup chocolate chips
½ cup Whole Earth peanut butter (or any nut butter)
½ cup Bob’s Red Mill ground flaxseeds
1/3 cup Brezzo honey or Great Northern pure maple syrup
1 teaspoon vanilla extract
Method:
In a mixing bowl, add all of the dry ingredients. Add the peanut butter, honey (or maple), and vanilla extract and thoroughly mix to combine all ingredients.
Let the mixture chill in the fridge for about 30 minutes. Once they are chilled, roll them into 1” diameter balls (you can use a cookie scooper to do this step). Store in an airtight container and keep refrigerated.
