Ingredients:
- 2 large ripe avocados
- 1/2 cup pure unsweetened cocoa powder
- 1 cup coconut sugar
- 1/4 cup Pacific Foods™ Organic Coconut Unsweetened Plant-Based Beverage
- 1/8 teaspoon peppermint extract (about 10 to 12 drops)
Instructions:
1. Remove skin and pit of avocados and discard. Add avocado to a food processor. Add remainder of ingredients to food processor. Pulse on high for 60 seconds, or until ingredients are smooth, creamy, and combined.
2. Divide pudding into small jars and refrigerate for 20 or more minutes before serving. Garnish with fresh mint, if desired.
