Spirulina is a microscopic freshwater vegetable that gets its name from its tiny spiral shape. Long ago, the Aztecs skimmed spirulina from the surface of lakes and ponds, sun-drying their harvest into small, nourishing superfood cakes. Spirulina's abundance of chlorophyll gives it a deep, emerald-green color. Rich in vitamin A as well as a good source of B vitamins and iron, spirulina is also made up of 75% protein including all nine essential amino acids.
